which is better 2009 or Shimano SLX groupset Shimano Saint 2007?

Better than what for? If you mean quality, you should make a careful comparison, but I suspect that since the Ghost is the groupset 3rd in the lineup Shimano mountain (VS 6 for SLX) SLX improvements in two years might not be sufficient to exceed the highest position of Saint. Said this, the price difference should be considered and, more importantly, because the target group for the two groups are different, you should consider your needs first.
